Getting outside and nettle soup.

If April showers do in fact bring May flowers then Vancouver should have an amazing May. But May is here and while there are lots of flowers the continued rain (and snow in certain parts of the country – shudder) is making me think that perhaps May needs a little reminder what its job is, to be warm enough that we can all get outdoors after a long, cooped up winter and raise our pasty faces to the sun.

Peas on earth.

There is an adorable picture that has been around for years that has a bunch of peas sitting on top of the world with the caption “Peas on Earth”. In the interest of copyright I haven’t included it, but do a google search, you’ll find it. If you haven’t seen it let me tell you, it’s pretty cute. Cute enough that my sister bought herself a t-shirt with it emblazoned on it (I haven’t included a picture of her either not because she’s copyrighted but because I figured she might hunt me down). Given that Sunday April 22nd is Earth Day I therefore thought it was only fitting to write about peas.  In this case pea soup.

Cook(those)books & spaghetti.

November seemed to be a slow month in the kitchen at my house.  I must confess, the cook (those) books recipe challenge I set for myself hasn’t been going exceptionally well.  I tried a few new meals last month, but not many, and very few exactly as written.  Which, of course, was the challenge.

I promise that December will be all about cooking.  There will be several new recipes that are challenge approved to start out the new year.  In the meantime, here are a few of the November meals I tried that passed muster. Continue reading

Chicken Soup and CPR.

As a personal trainer every year I have to redo my CPR.  When I showed up for the class a few weeks ago my instructor said “I was sick last week and my husband made me your chicken soup recipe – thanks for that”.   As we sat there doing chest compressions all I could think of was “what chicken soup recipe”.  Then, a couple of weeks later I got an email from a client asking if I could please send her my recipe for turkey soup.  Hmmm. Taking it as a sign I went through some of my old newsletters to see what they were referring to.  Ah ha!  This soup has been floating around my kitchen for so long I don’t even think of it as a recipe anymore.  Originally from the cookbook The Best of Cooking Light (2000), it is super easy, healthy and satisfying.  Exactly what you want in a chicken soup.  Now you will probably get around to making soup before you take CPR.  Personally I strongly suggest doing both.  However unlike this recipe, I hope the CPR never comes in handy. Pumpkin and Sweet Potato Fall Soup.

Fall officially showed up for the party in the past week.  Cooler days, crisper air, cozy sweaters, and heartier comfort food.   Like soup.

I like soup.  A lot.  Especially soups I can drink from a mug while reading a good book. Soups don’t get much love over the summer months, but they sure get a lot of it once it gets cold.  Even still, I don’t make soup very often.  I’m not really sure why.  Maybe because it always feels just a bit too labour intensive.  To be fair though, it is probably less work than many other meals that I make.  This soup is one of the easiest.
